MOFAD: DRIVEN By The Senses
Kaiseki is a traditional multi-course Japanese meal, carefully and elegantly composed. At Naka, on Capitol Hill in Seattle, chef Shota Nakajima delivers tasting menus of anywhere from five to 20 courses. They’re made with traditional, refined techniques Nakajima picked up in Japan and brought back to his native Washington State. "Fall bites," for example, is a meticulously constructed dish that includes grilled black cod belly, sous vide duck, and a half-dozen other delicacies.
